Keto Creamy Garlic Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning (or dried thyme, oregano, basil)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Chicken:
    • Season the chicken breasts with salt and pepper on both sides.
  2. Cook the Chicken:
    • In a large skillet, heat the olive oil over medium-high heat.
    • Add the chicken breasts to the skillet and cook for about 6-7 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C). Remove the chicken from the skillet and set aside.
  3. Make the Creamy Garlic Sauce:
    • In the same skillet, add minced garlic and cook for about 1 minute, until fragrant.
    • Pour in the chicken broth and scrape any browned bits from the bottom of the skillet.
    • Stir in the heavy cream, Parmesan cheese, and Italian seasoning. Bring to a simmer and cook for about 5 minutes, stirring occasionally, until the sauce thickens slightly.
  4. Combine and Serve:
    • Return the chicken breasts to the skillet, spooning the sauce over them.
    • Let the chicken simmer in the sauce for another 2-3 minutes to heat through.
    • Garnish with chopped fresh parsley before serving.
  5. Serve:
