  • 1 cup mixed vegetables (such as peas, carrots, corn)
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil

Preheat the Air Fryer:

    • Preheat your air fryer to 370°F (190°C).
  1. Prepare Ingredients:
    • In a bowl, mix the soy sauce, oyster sauce (if using), and sesame oil together.

    • Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry until it’s heated through and starting to brown slightly.
    • Add the mixed vegetables to the skillet and cook until they are tender-crisp.
  3. Add Rice and Sauce:
    • Add the chilled cooked rice to the skillet and break up any clumps. Stir-fry for a few minutes until the rice is heated through and starts to crisp slightly.
  4. Air Fryer Step:
    • Transfer the fried rice mixture to the air fryer basket. Spread it out evenly.
  5. Cook in Air Fryer:
    • Air fry at 370°F (190°C) for about 5-8 minutes, shaking the basket halfway through, until the fried rice is crispy and heated through.

    • Create a well in the center of the rice mixture in the air fryer basket. Pour the beaten eggs into the well.
  7. Continue Air Frying:
    • Air fry for an additional 3-5 minutes or until the eggs are cooked through and the fried rice reaches your desired crispiness.
