Syn free Lasagne

  • 400g can of chopped tomatoes
  • 2 tablespoons tomato purée
  • 1 teaspoon dried mixed herbs
  • Salt and pepper to taste
  • 250g fat-free cottage cheese
  • 250g fat-free natural yogurt
  • 2 eggs
  • Lasagne sheets (whole wheat if possible)
  • Low-calorie cooking spray

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. Prepare the meat sauce: In a large non-stick pan, sauté the minced beef (or alternative) over medium heat until browned. Drain any excess fat. Add the chopped onion, garlic, red bell pepper, and courgette (zucchini) to the pan. Cook for 5-7 minutes until softened.
  3. Add tomatoes and seasoning: Stir in the chopped tomatoes, tomato purée, dried herbs, salt, and pepper. Simmer gently for 10-15 minutes until the sauce has thickened slightly. Adjust seasoning to taste.
  4. Prepare the cottage cheese mixture: In a bowl, mix together the fat-free cottage cheese, fat-free natural yogurt, and eggs until well combined.
  5. Assemble the lasagne: In a baking dish, start layering with a third of the meat sauce, followed by a layer of lasagne sheets. Spread half of the cottage cheese mixture evenly over the lasagne sheets. Repeat with another third of the meat sauce, another layer of lasagne sheets, and the remaining cottage cheese mixture. Finish with the remaining meat sauce on top.
  6. Bake: Cover the baking dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until the lasagne sheets are cooked through and the top is golden and bubbling.
  7. Serve: Allow the lasagne to stand for 5-10 minutes before slicing and serving.
