Philly cheesesteak baked potatoes combine the flavors of a classic Philly cheesesteak with the comfort of a baked potato. Here’s how you can make them:
Ingredients:
For the baked potatoes:
- 4 large russet potatoes
- Olive oil
- Salt and pepper
For the Philly cheesesteak filling:
- 1 lb thinly sliced beef (such as ribeye or sirloin)
- 1 green bell pepper, thinly sliced
- 1 onion, thinly sliced
- 8 oz mushrooms, thinly sliced (optional)
- Salt and pepper, to taste
- 4 slices Provolone cheese (or cheese whiz if you prefer)
For garnish (optional):
- Chopped fresh parsley
- Sour cream
Instructions:
- Prepare the Baked Potatoes:
- Preheat your oven to 400°F (200°C).
- Scrub the potatoes clean and pat them dry.
- Pierce each potato several times with a fork.
- Rub olive oil over the potatoes and sprinkle with salt and pepper.
- Place the potatoes on a baking sheet and bake for about 45-60 minutes, or until they are tender when pierced with a fork.
- Prepare the Philly Cheesesteak Filling:
- While the potatoes are baking, prepare the filling.
- In a large skillet, heat some olive oil over medium-high heat.
- Add the thinly sliced beef to the skillet and cook until browned and cooked through, about 3-5 minutes. Season with salt and pepper to taste. Remove from skillet and set aside.
- In the same skillet, add a little more olive oil if needed, then add the sliced bell pepper, onion, and mushrooms (if using). Cook until softened and slightly caramelized, about 5-7 minutes. Season with salt and pepper.
- Return the cooked beef to the skillet with the vegetables and toss everything together until well combined. Remove from heat.
- Assemble the Philly Cheesesteak Baked Potatoes:
- Once the baked potatoes are done, remove them from the oven.
- Let them cool slightly until they are easy to handle.
- Slice each potato lengthwise down the center and fluff up the insides with a fork.
- Spoon the Philly cheesesteak filling generously into each potato.
- Top each potato with a slice of Provolone cheese (or cheese whiz).
- Broil the Potatoes:
- Preheat your oven’s broiler.
- Place the stuffed potatoes back onto the baking sheet and broil for 2-3 minutes, or until the cheese is melted and bubbly.
- Serve:
- Remove from the oven and garnish with chopped fresh parsley if desired.
- Serve hot, optionally with a dollop of sour cream on top.
Enjoy your Philly cheesesteak baked potatoes! They are hearty, flavorful, and make for a satisfying meal.
