Ingredients:

  • For the cake:
    • 1 and 3/4 cups (220g) all-purpose flour
    • 3/4 cup (65g) unsweetened cocoa powder
    • 1 and 1/2 teaspoons baking powder
    • 1 and 1/2 teaspoons baking soda
    • 1 teaspoon salt
    • 2 cups (400g) granulated sugar
    • 2 large eggs
    • 1 cup (240ml) whole milk
    • 1/2 cup (120ml) vegetable oil
    • 2 teaspoons vanilla extract
    • 1 cup (240ml) boiling water
  • For the chocolate frosting:
    • 1 cup (230g) unsalted butter, softened
    • 3 and 1/2 cups (420g) powdered sugar
    • 1/2 cup (45g) unsweetened cocoa powder
    • 1/2 teaspoon salt
    • 2 teaspoons vanilla extract
    • 1/4 cup (60ml) whole milk, or as needed

Instructions:

  1. Preheat Oven and Prepare Pans:
    • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch (23cm) round cake pans.
  2. Mix Dry Ingredients:
    • In a large bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients:
    • In a separate bowl, whisk together granulated sugar, eggs, milk, vegetable oil, and vanilla extract until well combined.
  4. Combine Batter:
    • Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
    • Stir in the boiling water, mixing until the batter is well combined and smooth. The batter will be thin, but that’s okay.
  5. Bake:
    • Pour the batter evenly into the prepared cake pans.
    • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool:
    • Remove cakes from the oven and let them cool in the pans for about 10 minutes.
    • Then, transfer them to a wire rack to cool completely.
  7. Prepare Frosting:
    • In a mixing bowl, beat softened butter until creamy.
    • Gradually add powdered sugar and cocoa powder, alternating with milk, until frosting is smooth and spreadable.
    • Mix in vanilla extract and salt.
  8. Frost and Assemble:
    • Once the cakes are completely cool, frost the top of one cake layer with a generous amount of frosting.
    • Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
