Cajun Salmon and Shrimp Recipe

Ingredients:

  • 4 salmon fillets (6 oz each)
  • 12 large shrimp, peeled and deveined
  • 2 tbsp Cajun seasoning (store-bought or homemade, see below)
  • 1 tbsp olive oil (plus more for cooking)
  • 1 lemon, sliced (for garnish)
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced (optional, for added color and flavor)
  • 1 small onion, sliced (optional)
  • 1 tbsp chopped fresh parsley (for garnish)
  • Salt and pepper to taste

Homemade Cajun Seasoning (optional):

  • 1 tbsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 1/2 tsp smoked paprika (optional for a smoky flavor)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Cajun Seasoning:
    • If making your own seasoning, mix all the Cajun seasoning ingredients in a small bowl and set aside.
  2. Preheat Oven and Prepare Baking Sheet:
    • Preheat your oven to 400°F (200°C).
    • Line a baking sheet with parchment paper or lightly grease it with olive oil.
  3. Season the Salmon and Shrimp:
    • Pat the salmon fillets and shrimp dry with paper towels.
    • Rub both sides of the salmon fillets and the shrimp with Cajun seasoning. You can adjust the amount based on your spice preference.
  4. Sear the Salmon and Shrimp:
    • Heat a large oven-proof skillet over medium-high heat with a bit of olive oil.

  6. Bake the Salmon:
    • Return the salmon fillets to the skillet (or place them on the prepared baking sheet if your skillet isn’t oven-proof).
    • Transfer the skillet or baking sheet to the preheated oven and bake for 6-8 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
  7. Combine and Serve:
    • Remove the skillet or baking sheet from the oven. Top the salmon fillets with the cooked shrimp and garnish with chopped parsley.
    • Serve with lemon slices for added freshness.
  8. Optional Sides:
    • This dish pairs wonderfully with sides like steamed rice, quinoa, or a fresh green salad. You can also serve it with a side of sautéed greens or roasted vegetables.

Tips:

  • Cooking the Shrimp: Be careful not to overcook the shrimp as they can become tough. They should be pink and opaque.
  • Salmon Skin: If you prefer, you can remove the skin before cooking, but leaving it on helps keep the salmon moist and adds flavor.
