Crispy French Fries

Crispy French fries are a classic favorite! Achieving that perfect crispiness involves a few key steps:

  1. Choosing the Right Potatoes: Russet potatoes are often preferred for their high starch content, which helps create a fluffy interior.
  2. Cutting: Cut the potatoes into uniform sticks about 1/4 to 1/2 inch thick. This ensures they cook evenly.
  3. Soaking: Soak the cut potatoes in cold water for at least 30 minutes or up to overnight. This removes excess starch, which helps them crisp up better during frying.
  4. Drying: Pat the soaked potatoes thoroughly dry with paper towels before frying. Moisture is the enemy of crispiness!
  5. Double Frying Method:
    • First Fry (Blanching): Heat oil to around 325°F (160°C) and fry the potatoes in batches for about 3-4 minutes, until they’re just starting to turn light golden.
    • Drain and Rest: Remove the partially fried potatoes from the oil and let them drain on paper towels. Let them rest for at least 10-15 minutes.
    • Second Fry (Crisping): Heat the oil to 375°F (190°C) and fry the potatoes again in batches until they are golden brown and crispy, about 2-3 minutes. Remove them from the oil and drain on paper towels.
  6. Seasoning: Immediately after frying, season the fries with salt and any other desired seasonings, such as garlic powder, paprika, or freshly ground black pepper.
  7. Serving: Serve the crispy fries hot and enjoy them plain or with your favorite dipping sauces!
