Ingredients:

  • 4 salmon fillets (skinless)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 3-4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, roughly chopped
  • 1/2 cup heavy cream (or half-and-half for a lighter version)
  • 1/4 cup chicken broth or white wine
  • 1 teaspoon dried Italian herbs (such as basil, oregano, thyme)
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Season the Salmon: Pat the salmon fillets dry with paper towels and season both sides with salt and pepper.
