Lemon rock scones

Lemon rock scones are a delightful variation on traditional scones, adding a zesty citrus flavor that pairs wonderfully with tea or coffee. Here’s a recipe to make lemon rock scones:

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • Zest of 1 lemon
  • 1/2 cup (1 stick) unsalted butter, cold and cut into small cubes
  • 1/2 cup milk (plus more for brushing)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup lemon juice (freshly squeezed)

For the glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons lemon juice
  • Zest of 1 lemon (optional, for garnish)

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, salt, and lemon zest.
  3. Cut in the butter: Using a pastry cutter or your fingertips, work the cold butter into the flour mixture until it resembles coarse crumbs.
  4. Mix wet ingredients: In a separate bowl, whisk together the milk, egg, vanilla extract, and lemon juice.
  5. Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. The dough will be slightly sticky.
  6. Shape the scones: Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together. Pat the dough into a circle about 1 inch thick.
  7. Cut the scones: Using a sharp knife or a bench scraper, cut the circle of dough into 8 wedges.
  8. Bake the scones: Place the scones onto the prepared baking sheet, spacing them a few inches apart. Brush the tops of the scones with a little milk.
  9. Bake in the preheated oven for 15-18 minutes, or until the scones are golden brown on top and cooked through.
  10. Make the glaze: While the scones are baking, prepare the glaze by whisking together the powdered sugar and lemon juice until smooth. Adjust the consistency with more lemon juice or powdered sugar as needed.
  11. Glaze the scones: Once the scones are done baking and have cooled slightly, drizzle the glaze over the tops. Optionally, sprinkle with additional lemon zest for garnish.
  12. Serve: Allow the glaze to set for a few minutes before serving the scones warm or at room temperature.

Enjoy these lemon rock scones with a cup of tea or coffee for a delightful citrusy treat!
