Philly Cheesesteak Baked Potato

Philly cheesesteak baked potatoes combine the flavors of a classic Philly cheesesteak with the comfort of a baked potato. Here’s how you can make them:

Ingredients:

For the baked potatoes:

  • 4 large russet potatoes
  • Olive oil
  • Salt and pepper

For the Philly cheesesteak filling:

  • 1 lb thinly sliced beef (such as ribeye or sirloin)
  • 1 green bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 8 oz mushrooms, thinly sliced (optional)
  • Salt and pepper, to taste
  • 4 slices Provolone cheese (or cheese whiz if you prefer)

For garnish (optional):

  • Chopped fresh parsley
  • Sour cream

Instructions:

  1. Prepare the Baked Potatoes:
    • Preheat your oven to 400°F (200°C).
    • Scrub the potatoes clean and pat them dry.
    • Pierce each potato several times with a fork.
    • Rub olive oil over the potatoes and sprinkle with salt and pepper.
    • Place the potatoes on a baking sheet and bake for about 45-60 minutes, or until they are tender when pierced with a fork.
  2. Prepare the Philly Cheesesteak Filling:
    • While the potatoes are baking, prepare the filling.
    • In a large skillet, heat some olive oil over medium-high heat.
    • Add the thinly sliced beef to the skillet and cook until browned and cooked through, about 3-5 minutes. Season with salt and pepper to taste. Remove from skillet and set aside.
    • In the same skillet, add a little more olive oil if needed, then add the sliced bell pepper, onion, and mushrooms (if using). Cook until softened and slightly caramelized, about 5-7 minutes. Season with salt and pepper.
    • Return the cooked beef to the skillet with the vegetables and toss everything together until well combined. Remove from heat.
  3. Assemble the Philly Cheesesteak Baked Potatoes:
    • Once the baked potatoes are done, remove them from the oven.
    • Let them cool slightly until they are easy to handle.
    • Slice each potato lengthwise down the center and fluff up the insides with a fork.
    • Spoon the Philly cheesesteak filling generously into each potato.
    • Top each potato with a slice of Provolone cheese (or cheese whiz).
  4. Broil the Potatoes:
    • Preheat your oven’s broiler.
    • Place the stuffed potatoes back onto the baking sheet and broil for 2-3 minutes, or until the cheese is melted and bubbly.
  5. Serve:
    • Remove from the oven and garnish with chopped fresh parsley if desired.
    • Serve hot, optionally with a dollop of sour cream on top.
