Smashed Roasted Potatoes

Ingredients

  • 1.5 lbs (about 680 grams) baby potatoes or small Yukon Gold potatoes
  • 2-3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried rosemary or thyme (optional)
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • Fresh herbs for garnish (like parsley or chives, optional)

Instructions

  1. Preheat Oven:
    • Preheat your oven to 450°F (230°C).
  2. Cook Potatoes:
    • Place the potatoes in a large pot and cover with water. Add a generous pinch of salt.
    • Bring to a boil over high heat, then reduce to a simmer and cook for about 10-15 minutes, or until the potatoes are fork-tender but not falling apart.
    • Drain the potatoes and let them cool slightly.
  3. Prepare Baking Sheet:
    • While the potatoes are cooking, line a baking sheet with parchment paper or lightly grease it with cooking spray.
  4. Smash Potatoes:
    • Once the potatoes are cool enough to handle, use the bottom of a glass or a potato masher to gently press down on each potato, smashing them to about 1/2 inch thickness.
  5. Season and Roast:
    • Place the smashed potatoes on the prepared baking sheet. Drizzle with olive oil and sprinkle with garlic powder, onion powder, rosemary or thyme (if using), paprika, salt, and black pepper.
    • Use a brush or spoon to make sure the potatoes are evenly coated with the oil and seasoning.
  6. Roast Potatoes:
    • Roast in the preheated oven for about 20-25 minutes, or until the edges are crispy and golden brown. You can flip the potatoes halfway through the cooking time for more even crispiness.

Tips
