No-Bake Peanut Butter Oat Bars
Ingredients:
- 1 cup creamy peanut butter
- 1/2 cup honey
- 1/2 cup coconut oil (or butter)
- 2 cups rolled oats
- 1/2 cup shredded coconut (optional)
- 1/4 cup mini chocolate chips (optional)
- Pinch of salt
Instructions:
- In a microwave-safe bowl or on the stove, melt together the peanut butter, honey, and coconut oil (or butter) until smooth.
- Remove from heat and stir in the rolled oats, shredded coconut, chocolate chips (if using), and a pinch of salt until well combined.
- Press the mixture firmly into an 8×8-inch pan lined with parchment paper.
- Refrigerate for at least 2 hours, or until firm.
- Once set, cut into bars and enjoy!
