No-Bake Peanut Butter Oat Bars

Ingredients:

  • 1 cup creamy peanut butter
  • 1/2 cup honey
  • 1/2 cup coconut oil (or butter)
  • 2 cups rolled oats
  • 1/2 cup shredded coconut (optional)
  • 1/4 cup mini chocolate chips (optional)
  • Pinch of salt

Instructions:

  1. In a microwave-safe bowl or on the stove, melt together the peanut butter, honey, and coconut oil (or butter) until smooth.
  2. Remove from heat and stir in the rolled oats, shredded coconut, chocolate chips (if using), and a pinch of salt until well combined.
  3. Press the mixture firmly into an 8×8-inch pan lined with parchment paper.
  4. Refrigerate for at least 2 hours, or until firm.
  5. Once set, cut into bars and enjoy!
